Hot Beef Sandwiches
Beef roast cut against the grain in slices, brown in pan on high heat for a few minutes. Lower heat, add water (enough to cover meat), add beef bouillon cubes, worcestershire sauce and pepper. Let simmer till meat is done.
























Cornmeal Fish Fry

Recipe Ingredients:

  • Mix:
  • 1.5 cups fine ground cornmeal
  • 1 heaping tablespoon of paprika
  • 1 level tablespoon of black pepper
  • 1 level tablespoon of garlic powder
  • 1 teaspoon salt
  • 1 brick of Crisco shortening (butter flavored)

Cooking instructions:
Mix the dry ingredients in a bag prior to going camping. Fillet your fish and pat them semi-dry. Roll each fillet in the cornmeal mixture prior to frying.

Heat the brick of Crisco in the pan so it is nice and hot. Fry the coated fish in the grease and enjoy!

 

Backcountry Breakfast

Recipe Ingredients:

  • 1/2 cup oatmeal (Quick oats)
  • 1/4 cup Carnation low fat powdered milk
  • 1/3 cup raisins 1/3 cup mixed nuts
    (chopped walnuts & sliced almonds)
  • a dash of shelled sunflower seeds (unsalted is best)
  • 1 tablespoon of brown sugar

Cooking instructions:
Mix ingredients thoroughly in a bowl and pour contents into a baggy. When ready to eat breakfast all you have to do is dump contents from the baggy into a pot and add 2 cups boiling water. Let contents sit for two minutes, then serve.

Variations/Hints:
I also like to add dehydrated fruit like apples and peaches.

Comments:
This is very filling and much tastier than instant Oatmeal packets. This recipe serves about 2 people but I like to add about a 1/4 cup of oats to make sure.

 

Scout Dinner

Recipe Ingredients:

  • Hamburger patty
  • Potato (sliced)
  • Baby carrots
  • Onions
  • Spices
  • Tinfoil
  • Pam Spray (spray foil before placing patty inside)

Cooking instructions:
Wrap 1 hamburger patty, 1 sliced potato, lots of baby carrots, part of a sliced onion and salt/pepper in heavy duty tinfoil. Place in the red hot coals of your camp fire for about 30 minutes.

Variations/Hints:
These can be made ahead of time and kept in your freezer or cooler until you are ready to cook them.

 

Fruit Pies

Recipe Ingredients:

  • Bread
  • Butter
  • Cherry Pie filling (or your favorite filling)

Cooking instructions:
Butter two slices of bread. Place buttered side against the iron side of a metal sandwich maker. Fill with pie filling. Close sandwich maker and hold over the fire (not too close, or your butter will burn). Check on regularly for doneness.

 

Coffee Can Ice Cream

Materials Needed:
1 (1 pound) coffee can with lid
1 (3 pound) coffee can with lid

Ice Cream Ingredients:
1 pint of 1/2 & 1/2
1 egg
1/2 cup sugar
1 tsp vanilla or 2 tbs chocolate syrup or 1/4 cup strawberries

Add the above ingredients to the 1 pound coffee can. Put the lid on the coffee can and secure with duct tape.

Place the 1 pound coffee can into the 3 pound coffee can. Layer with crushed ice and rock salt and place the lid onto the 3 pound coffee can.

Now the fun begins! Find a partner. Sit on the ground and roll the coffee can back and forth, 3 to 4 feet apart.

Roll for 8 to 10 minutes. Check to see if the ice cream is hard. If it isn't, replace the lid and add more ice and rock salt. Roll for another 8 minutes. Serve into good size bowls.

Serves  4 people. This is really good ice cream and it works every time! This recipe can't be doubled.
